Easy Breakfast Egg White Taco

Serves: 1          Prep Time: 5 minutes          Total Time: 11 minutes

 

Ingredients

  • 1/3 tomato
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 cup egg white, large
  • 2 corn tortillas, 6″
  • 1 cup spinach
  • 1/3 avocado

 

Preparation

  1. Chop tomato.
  2. Heat olive oil in medium nonstick skillet over medium-low heat.
  3. Place egg whites in skillet; cook, stirring frequently, for 4 to 6 minutes, or until eggs are set and no visible liquid remains.
  4. Divide eggs between tortillas, top evenly with spinach, tomato and avocado.
