Greek Chicken

Serves: 4     Prep Time: 5 minutes     Total Time: 30 minutes

 

Ingredients

  • 4 garlic cloves, fresh
  • 6 teaspoons extra virgin olive oil
  • 4 teaspoons dried rosemary
  • 4 teaspoons dried thyme
  • 4 teaspoons ground oregano
  • 8 teaspoons lemon juice
  • 2 cups cherry tomatoes
  • 26 ounces boneless skinless chicken breast

 

Preparation

  1. Preheat oven to 375°F.
  2. Lightly coat a baking dish with non-stick cooking spray.
  3. Mince garlic and combine with olive oil, rosemary, thyme, oregano and lemon juice in a small bowl.
  4. Halve tomatoes.
  5. Place chicken in a baking dish. Coat evenly with herb mixture. Surround chicken with tomatoes.
  6. Roast for 20 to 25 minutes or until chicken is no longer pink in the middle and juices run clear.
