Greek Chicken
Serves: 4 Prep Time: 5 minutes Total Time: 30 minutes
Ingredients
- 4 garlic cloves, fresh
- 6 teaspoons extra virgin olive oil
- 4 teaspoons dried rosemary
- 4 teaspoons dried thyme
- 4 teaspoons ground oregano
- 8 teaspoons lemon juice
- 2 cups cherry tomatoes
- 26 ounces boneless skinless chicken breast
Preparation
- Preheat oven to 375°F.
- Lightly coat a baking dish with non-stick cooking spray.
- Mince garlic and combine with olive oil, rosemary, thyme, oregano and lemon juice in a small bowl.
- Halve tomatoes.
- Place chicken in a baking dish. Coat evenly with herb mixture. Surround chicken with tomatoes.
- Roast for 20 to 25 minutes or until chicken is no longer pink in the middle and juices run clear.
